This article explains who can do what inside a HueChat account, and where you can see a record of it.
Administrator. Administrators own the account configuration. Only they can:
Agent. Agents work in the Team Inbox. They can read and reply to conversations in the inboxes they are assigned to, manage Contacts and Tickets, use canned responses and labels, and see the reports their role allows. They cannot change account settings.
Custom roles. On the Enterprise plan you can define custom roles with a narrower or wider set of permissions and assign them to agents. Exact options may differ by plan.

Grant the lowest role that lets a person do their job, and review the agent list when someone leaves.
The Audit Log is available on the Business and Enterprise plans under Settings. It tracks changes made to your account and shows who did what and when. Each entry records the action, the type of object it touched (for example an inbox, an agent or a label), the user who did it or "System" for automatic changes, and the time.

Use it to answer questions like "who disconnected this inbox?" or "when was this automation changed?".
Application logs strip query strings, so OAuth codes and tokens never appear in them. Logs are kept only as long as operating the service requires.
